Chicken Kabobs with Pineapple
Feel like you’re at the beach in your own backyard!
- 4 oz chicken breast (cubed)
- 2 T Teriyaki marinade (Combine 2 T canola oil or extra virgin olive oil, 2 T low sodium soy sauce, 2 t brown sugar, ½ t garlic powder, and ½ T sherry. Add chicken. Cover and refrigerate with marinate. Turn occasionally. (You may substitute with 3 T bottled low sodium Teriyaki marinate.)
- 2 tbsp Soy sauce (low sodium)
- 2 tbsp Brown sugar
- 1/2 t garlic powder
- 1/2 tbsp Sherry
- 1 green bell pepper (cubed)
- 1 onion (sweet, cubed)
- 6 cherry tomatoes
- 1 c pineapple chunks (save juice)
- 1 mixed green salad
- 2 tbsp salad dressing (your choice)

On several skewers alternate marinated chicken, green bell pepper, onion, tomatoes, and pineapple chunks. Grill or broil. While cooking baste with any remaining marinade and pineapple juice. Serve with mixed green salad and salad dressing of your choice.
